Spicy Asian beef noodle soup with bold flavors.
Ingredients:
  • 1l beef stock
  • 1 red onion, halved, sliced
  • 2 garlic cloves, thinly sliced
  • 4cm-piece ginger, peeled, finely grated
  • 2 star anise
  • 1 cinnamon quill
  • 42.00 gm soy sauce
  • 750g Beef chuck casserole steak, cut into 3cm pieces
  • 24.40 gm fish sauce
  • 125g vermicelli noodles
  • 2 bok choy, trimmed, leaves separated
  • 100g snow peas, trimmed, sliced in half diagonally
  • 2 spring onions, thinly sliced
  • 62.50 ml coriander leaves, to serve
  • 1/2 red chilli, thinly sliced
Instructions:
  • In a large stock pot, combine stock, 1L (4 cups) water, onion, garlic, ginger, star anise, cinnamon, and soy sauce. Bring to a boil over high heat. Add beef, reduce heat to low, cover, and simmer for 1 hour, skimming the surface as needed.
  • Uncover and let it simmer for another 30 minutes. Stir in fish sauce, noodles, bok choy, and snow peas. Simmer for about 2 minutes until noodles are softened and veggies are tender.
  • Serve the soup in bowls and garnish with fresh spring onions, coriander, and spicy chilli on top.
