Spicy Balsamic Salmon

Spice up dinner with zesty marmalade and vinegar glazed grilled salmon - ready in just 15 minutes!
Ingredients:
  • 1 lb salmon fillet, 3/4 to1 inch thick
  • 1/2 teaspoon black and red pepper blend
  • 1/4 teaspoon salt
  • 1/4 teaspoon ground ginger
  • 3 tablespoons balsamic vinegar
  • 3 tablespoons orange marmalade
Instructions:
  • Preheat a medium-sized contact grill with the lid closed for 5 to 10 minutes. Cut the salmon into 4 serving pieces and season with pepper blend, salt, and ginger. In a 1-quart saucepan, combine vinegar and marmalade.
  • Place the salmon, skin side down, on the grill and close the lid. Grill for 3 minutes. Brush with the vinegar mixture. Continue grilling for 2 to 3 more minutes, brushing with the vinegar mixture occasionally, until the salmon flakes easily with a fork.
  • Bring the remaining vinegar mixture to a boil and stir constantly for 1 minute. Enjoy with salmon.
