Spicy bean and rice wrap ready in 10 minutes, a quick and satisfying dinner option!
Ingredients:
  • 1 can (15 oz) spicy chili beans, undrained
  • 3/4 cup uncooked instant rice
  • 1/3 cup water
  • 1 medium bell pepper (any color)
  • 1 medium tomato
  • 6 flour tortillas (8 inch), heated
Instructions:
  • Combine beans, rice, and water in a 10-inch nonstick skillet. Bring to a boil, then simmer on medium-low heat with a lid for 5 to 8 minutes until rice is tender. While it cooks, chop bell pepper and tomato.
  • Evenly distribute bean mixture onto the center of each warm tortilla. Top with bell pepper and tomato. Fold one end of tortilla up over the filling, then fold the right and left sides over the folded end, overlapping the edges. Roll tightly (secure with a toothpick if needed). Wrap each wrap with foil for a convenient on-the-go dinner.
