Spicy salsa chili with crunchy cereal for a flavorful, fiber-rich meatless main dish.
Ingredients:
  • 1/2 cup uncooked regular long-grain white rice
  • 1 cup water
  • 1 cup Fiber One™ original bran cereal
  • 2 cans (15 oz each) Progresso™ dark red kidney beans, drained, rinsed
  • 1 small onion, finely chopped (1/4 cup)
  • 1/4 cup diced green bell pepper
  • 1 egg or 2 egg whites, beaten
  • 1 tablespoon chili powder
  • 1 teaspoon ground cumin
  • 1/4 teaspoon ground red pepper (cayenne)
  • Salad greens, if desired
  • 1/2 cup thick & chunky salsa
Instructions:
  • Prepare rice according to package instructions. While the rice is cooking, place cereal in a sealed plastic bag and crush it using a rolling pin, meat mallet, or food processor.
  • Place beans in a large bowl and mash with a potato masher or fork. Add onion, bell pepper, cooked rice, egg, chili powder, cumin, red pepper, and 2 tablespoons of the cereal. Shape into 8 patties and coat them completely with the remaining cereal.
  • Coat a 10-inch skillet with cooking spray. Cook 4 patties over medium heat for about 10 minutes, flipping once, until golden brown. Remove patties from skillet, cover, and keep warm while cooking the rest.
  • Arrange the patties on a bed of fresh salad greens and generously spoon salsa over the top for a flavorful finishing touch.
