Elevate your meal with zesty beef noodle salad tossed in sweet chili sauce.
Ingredients:
  • 400g piece beef eye fillet
  • 68.75 gm sweet chilli sauce
  • 50g vermicelli noodles
  • 1 carrot, shredded
  • 1 bunch fresh mint, leaves picked
  • 1 bunch fresh coriander, leaves picked
  • 1 spring onions, sliced diagonally
  • 2 limes, finely grated zested and juiced
  • 42.00 gm soy sauce
  • 40.00 ml ginger, grated
  • 13.50 gm white sugar
  • 12.20 gm fish sauce
  • Lime wedges, to serve
  • Chilli flakes, to serve (optional)
Instructions:
  • Preheat the oven to 200C or 180C fan. Heat an ovenproof frying pan on high heat. Sear the beef for 2-3 mins until browned all over. Transfer the pan to the oven and roast for 15 mins for medium-rare, or until it reaches your desired doneness. Drizzle sweet chili sauce over the beef, coating it well. Tent loosely with foil and let it rest for 20 mins before serving.
  • Place the noodles in a heatproof bowl and cover them with boiling water. Let them soak according to the packet directions, then drain and cut the noodles into 6cm lengths.
  • Slice the beef thinly. Combine noodles, carrot, mint, coriander, spring onions, and lime zest in a large bowl. In a separate bowl, mix lime juice, soy sauce, ginger, sugar, fish sauce, and any pan juices from the beef. Pour over the noodle mixture and sliced beef, toss to combine. Serve with lime wedges and sprinkle with chili flakes, if desired.
