Spicy beef stew packed with bold flavors, perfect for slow cooker or stove top. Delicious over mashed potatoes or rice.
Ingredients:
  • 1 pound beef stew meat
  • 2 cloves garlic, minced
  • 1 teaspoon chopped fresh ginger
  • 1 fresh jalapeno peppers, diced
  • 1 tablespoon curry powder
  • 1 (14.5 ounce) can diced tomatoes with juice
  • 1 onion, sliced and quartered
  • 1 cup beef broth
Instructions:
  • In a skillet over medium heat, sizzle the olive oil and sear the beef until golden. Set beef aside, keeping the flavorful juices. Season it with salt and pepper. Next, cook the garlic, ginger, and jalapeno in the same skillet for 2 minutes until fragrant, then sprinkle with curry powder. Stir in the diced tomatoes and their juices to complete the dish.
  • First, arrange the onion at the bottom of a slow cooker followed by the browned beef. Then, transfer the skillet mixture to the slow cooker and incorporate the beef broth.
  • Cook the dish covered on Low for 6 to 8 hours.
