Spicy Bucatini Pasta

Indulge in zesty Italian flavors with pasta, tomatoes, and crispy bacon.
Ingredients:
  • 2 tablespoons olive or vegetable oil
  • 1 tablespoon chopped fresh parsley
  • 1 teaspoon chopped fresh thyme leaves
  • 1 medium onion, thinly sliced
  • 1 red jalapeño chile, seeded and finely chopped
  • 1/4 pound sliced bacon, cut into 1-inch pieces
  • 1 tablespoon balsamic vinegar
  • 4 cups chopped plum (Roma) tomatoes
  • 1 package (16 ounces) bucatini pasta
Instructions:
  • Heat oil in a Dutch oven or skillet over medium-high heat. Sauté parsley, thyme, onion, and chile for about 3 minutes, stirring frequently, until the onion is soft.
  • Add bacon to the pan and let it sizzle to golden perfection for about 8 minutes, making sure to stir occasionally until it's perfectly crisp. Save 2 tablespoons of the delicious bacon fat, and bid farewell to the rest.
  • Stir vinegar into bacon mixture until evaporated. Add tomatoes and the reserved bacon fat. Bring to a boil, then reduce heat, cover, and simmer for 20 minutes, stirring occasionally.
  • Cook the pasta according to package instructions, then add it to the tomato mixture. Stir over high heat for about 3 minutes, until the pasta is evenly coated.
