Speedy spicy chicken chili using 4 ingredients from Betty Crocker's cookbook for a quick and tasty meal option.
Ingredients:
  • 1 pound boneless skinless chicken breast, cut into 3/4-inch pieces
  • 1 can (14 1/2 ounces) salsa-style chunky tomatoes, undrained
  • 1 can (15 ounces) spicy chili beans in sauce
  • 1/2 cup shredded Cheddar cheese (2 ounces)
Instructions:
  • Prepare a 12-inch nonstick skillet by spraying it with cooking spray, then heat it over medium-high heat. Cook the chicken in the skillet for 3 to 5 minutes, stirring frequently, until it turns light brown.
  • Add tomatoes and beans to the dish, then lower the heat to medium-low. Simmer for 8 to 10 minutes, stirring occasionally, until the chicken is fully cooked. Garnish each serving with cheese before serving.
