Spicy baked chicken drumsticks - a crunchy and tasty meal from Betty Crocker's Heart Healthy Cookbook!
Ingredients:
  • 2 pounds chicken drumsticks
  • 1/3 cup Gold Medal™ all-purpose flour
  • 1/3 cup yellow whole-grain cornmeal
  • 1/2 teaspoon ground cumin
  • 1/2 teaspoon chili powder
  • 1/4 teaspoon salt
  • 1/3 cup buttermilk
  • 1/4 teaspoon red pepper sauce
  • Cooking spray
Instructions:
  • Preheat oven to 400°F. Grease a 13x9x2-inch rectangular pan with cooking spray. De-skin and trim fat from the chicken.
  • Combine flour, cornmeal, cumin, chili powder, and salt in a sturdy resealable plastic bag. In a separate bowl, mix buttermilk with pepper sauce. Dip chicken into buttermilk mixture, then transfer to bag. Seal bag and shake until chicken is evenly coated. Transfer chicken to a pan and lightly spray with cooking spray.
  • Bake uncovered for 40-45 minutes until the chicken juices run clear when thickest pieces are cut.
