Spicy chicken dumplings add a kick to tasty hokkien noodle soup.
Ingredients:
  • 600g chicken mince
  • 1/2 tsp Chinese five-spice (see note)
  • 1 eggwhite
  • 2 red chillies, deseeded, finely sliced
  • 2 green onions, thinly sliced
  • 1530.00 gm chicken style liquid stock
  • 31.50 gm salt-reduced soy sauce
  • 12.20 gm fish sauce
  • 16.00 gm brown sugar
  • 1 bunch baby choy sum, trimmed, roughly chopped (see note)
  • 600g packet fresh hokkien noodles
Instructions:
  • Mix together ground meat, fragrant five-spice powder, eggwhite, spicy chillies, and fresh green onions in a bowl until well combined. Shape the mixture into 12 small, flavorful dumplings. Arrange them on a tray. For optimal flavor development, chill in the refrigerator for 30 minutes, if time allows.
  • In a large saucepan over medium-high heat, bring together chicken stock, soy sauce, fish sauce, and sugar until boiling. Add dumplings and cook for 4 to 5 minutes or until fully cooked. Remove dumplings with a slotted spoon to a plate and keep warm.
  • Bring the stock back to a rolling boil. Add choy sum and noodles, then cook for 2 minutes or until the noodles are tender. Finally, return the dumplings to the saucepan.
  • Serve the soup, dumplings, and noodles in bowls right away.
