Ingredients:
  • 40.00 ml Pataks Hot Mango Pickle
  • 42.00 gm fresh lemon juice
  • 20.00 ml chopped fresh coriander leaves
  • 500g chicken tenderloins
  • 12.00 gm sesame seeds
  • 1-36.40 gm olive oil
  • 660.00g cabbage
  • 2 shallots, trimmed, diagonally sliced
  • 1 carrot, peeled, cut into matchsticks
  • 31.80 gm Soy & Chilli Dressing
Instructions:
  • Mix the pickles, lemon juice, and fresh coriander. Add the chicken to a glass or ceramic dish and evenly coat it by tossing.
  • Toast sesame seeds in a large non-stick pan for about 5 minutes until golden brown, then transfer to a plate.
  • Warm oil in a pan over medium-high heat. Sear chicken in batches for 2 minutes per side or until fully cooked. Transfer to a separate plate.
  • Toss cabbage, shallots, and carrot in the pan for 2 minutes until warmed through. Stir in dressing and remove from heat.
  • Plate the cabbage salad, layer the chicken on top, and finish off with a sprinkle of sesame seeds.
