Spice up turkey chili with chunky salsa and chipotle seasoning for a quick and delicious 15-minute dinner.
Ingredients:
  • 1 tablespoon vegetable oil
  • 1 lb ground turkey
  • 1 large poblano chile, seeded, finely chopped
  • 2 cups water
  • 1 teaspoon chipotle chile powder
  • 2 cans (16 oz each) pinto beans, drained, rinsed
  • 1 jar (16 oz) thick & chunky salsa
  • Shredded Cheddar cheese, if desired
Instructions:
  • Heat oil in a 3-quart saucepan over medium-high heat. Cook turkey and poblano chile for 5 minutes, stirring occasionally, until turkey is cooked through.
  • Combine water, chile pepper powder, beans, and salsa in a pot. Bring to a boil while covered. Use a potato masher to slightly mash the beans until the soup thickens. Top each serving with cheese before serving.
