Spicy corn salsa with grilled poblano peppers, jalapenos, cilantro, and lime juice - perfect for entertaining.
Ingredients:
  • 6 ears sweet corn
  • 2 poblano peppers
  • 2 jalapeno peppers, diced
  • 0.5 red onion, diced
  • 0.33333334326744 cup chopped fresh cilantro
  • 1 tablespoon lime juice
  • 1 pinch salt and ground black pepper to taste
Instructions:
  • Heat up your outdoor grill to medium heat and give the grate a light coating of oil.
  • Grill corn and poblano peppers until corn is charred and peppers are softened, about 12-15 minutes. Let them cool for 10 minutes before handling.
  • Cut the corn off the cobs and dice the poblanos; transfer to a bowl. Combine with jalapenos, onion, cilantro, lime juice, salt, and pepper, and mix well.
