Spicy sushi-inspired spring rolls with imitation crab and veggies - an easy and tasty appetizer!
Ingredients:
  • 0.75 cup imitation crabmeat
  • 1.5 tablespoons mayonnaise
  • 1 teaspoon sriracha sauce, or to taste
  • 4 rice paper wrappers
  • 0.33333334326744 English cucumber, cut into matchsticks
  • 1 carrot, cut into matchsticks
  • 0.5 ripe avocado, sliced lengthwise into 8 pieces
  • 1 green onion, cut into matchsticks
Instructions:
  • Flake the crabmeat using 2 forks or a food processor.
  • Combine the crabmeat, mayonnaise, and sriracha in a small bowl.
  • Submerge 1 rice paper wrapper in hot water to soften. Place it on a wooden cutting board or a clean, moist dish towel. Arrange 1/4 of the cucumber, carrot, avocado, crabmeat mixture, and green onion on the lower third of the rice paper.
  • Encase filling in rice paper, ensuring it is tightly wrapped and secure. Place seam-side down on a plate. Repeat with remaining ingredients.
