Flavorful cucumber salad with peanuts, garlic, and green onions, topped with a sweet-salty dressing infused with spicy Asian chili-garlic sauce.
Ingredients:
  • 1 teaspoon vegetable oil
  • 4 cloves garlic, minced
  • 3 tablespoons white vinegar
  • 1 teaspoon white sugar, or to taste
  • 1 tablespoon chile-garlic sauce (such as Huy Fong Foods®)
  • 1 tablespoon fish sauce
  • 1 teaspoon ground coriander
  • 0.5 teaspoon red pepper flakes
  • 2 medium cucumbers - halved lengthwise, seeds scraped out with a spoon, and thinly sliced
  • 0.5 cup chopped peanuts
  • 2 green onions, chopped
Instructions:
  • In a small skillet over medium heat, heat vegetable oil. Cook and stir garlic until softened and lightly browned, for 3 to 5 minutes. Remove from heat and allow to cool.
  • Combine vinegar and sugar in a salad bowl and whisk until sugar dissolves. Add chili-garlic sauce, fish sauce, coriander, red pepper flakes, and cooled garlic, then whisk until well combined. Add cucumbers, peanuts, and green onions, stirring until coated with dressing. Chill in the refrigerator for at least 1 hour or overnight before serving.
