Spicy cashew jalapeño marinated chicken, grilled to perfection and served with lime wedges.
Ingredients:
  • 1 cup roasted (salted or unsalted) cashew nuts
  • 6 tablespoons cilantro, roughly chopped (leaves and stems)
  • 1/4 cup extra virgin olive oil
  • 4 cloves garlic, roughly chopped
  • 2 tablespoons soy sauce (use gluten-free for gluten-free version)
  • 2 teaspoons brown sugar
  • 1 to 2 jalapeño peppers, stems and most seeds discarded, roughly chopped
  • 1 tablesoon lime juice, plus lime wedges for garnish
  • Kosher salt and freshly ground black pepper
  • 3 pounds bone-in, skin-on chicken thighs
Instructions:
  • To make the spicy cashew paste, combine cashews, cilantro, olive oil, garlic, soy sauce, brown sugar, jalapeño, lime juice, and 2 tablespoons of water in a food processor. Blend until smooth. Season with salt and pepper. Set aside one-third for serving and use the rest to coat the chicken.
  • Cover the chicken thighs with salt, pepper, and cashew paste. Marinate the chicken and refrigerate until ready to cook. Allow the chicken to come to room temperature before cooking.
  • Cook the chicken: Preheat broiler or grill to medium heat. Cook chicken, turning occasionally, until golden and crispy, and a meat thermometer reads 165°F when inserted into the thickest part of the thigh or until juices run clear, about 25-35 minutes on the grill or 10-20 minutes under the broiler. Some coating may fall off as you turn the chicken; this is normal. Serve with lime wedges, reserved marinade, and cilantro.
