Delicious gluten-free potato starch noodles, ideal for soaking up your favorite sauce with a superb texture and neutral flavor.
Ingredients:
  • 1 cup potato starch, or as needed
  • 0.25 teaspoon kosher salt
  • 1 teaspoon vegetable oil
  • 0.75 cup boiling water, or as needed
  • 2 tablespoons oyster sauce
  • 2 tablespoons soy sauce
  • 2 tablespoons rice vinegar
  • 4 teaspoons ketchup
  • 0.25 teaspoon sesame oil
  • 1 teaspoon white sugar
  • 1 tablespoon Sriracha sauce
  • 1 tablespoon vegetable oil
  • 6 cloves garlic, minced
  • 1 teaspoon red pepper flakes, or to taste
  • 0.25 cup thinly sliced green onions
  • 0.25 cup chopped fresh cilantro, or to taste
Instructions:
  • Mix together 1 cup of potato starch with a pinch of salt and vegetable oil in a bowl. Gradually add boiling water, stirring constantly, until dough reaches desired consistency.
  • Transfer the dough to a lightly dusted work surface with potato starch. Knead swiftly while the dough is warm, adding more potato starch as needed, until it becomes smooth and elastic.
  • First, bring a generously salted large pot of water to a boil. Then, prepare a large bowl of cold water.
  • Roll the dough to 1/8 inch thickness while waiting for the water to boil. Use a pizza cutter to cut the dough into 1/4-inch noodles, then separate them.
  • Place the potato noodles in the boiling water and cook until they float, approximately 1 minute. Then, transfer them to a bowl of cold water. Repeat the process with the remaining noodles as needed.
  • Combine the oyster sauce, soy sauce, rice vinegar, ketchup, sesame oil, sugar, and Sriracha in a bowl and whisk until well blended.
  • In a hot skillet with vegetable oil, briefly cook garlic for 15 seconds until fragrant. Quickly toss in red pepper flakes and green onions, stir-frying for a few seconds. Add potato noodles before garlic browns, allowing some water into the pan to prevent burning.
  • Stir in the sauce until the noodles are fully coated. Cook until the noodles are heated through and the sauce begins to simmer, about 1 to 2 minutes. Remove from heat and mix in 1/4 cup of freshly chopped cilantro.
  • Separate the noodles into 2 bowls and sprinkle with extra cilantro and red pepper flakes for added flavor.
