Spicy Italian Pork Meatballs

Savory pork meatballs with Italian herbs, Parmesan, and a hint of red pepper, served with marinara for dipping or paired with pasta or in a hoagie for a satisfying meal.
Ingredients:
  • 1 lb ground pork
  • 1/2 cup Progresso™ Panko Italian style crispy bread crumbs
  • 1/4 cup shredded Parmesan cheese
  • 1 tablespoon chopped fresh basil leaves
  • 2 teaspoons finely chopped garlic
  • 1 teaspoon dried Italian herb seasoning
  • 1/2 teaspoon salt
  • 1/2 teaspoon crushed red pepper flakes
  • 1 tablespoon olive oil
  • 3 cloves garlic, crushed
  • 1/4 teaspoon crushed red pepper flakes
  • 1 can (14.5 oz) Muir Glen™ Organic Crushed Tomatoes Fire Roasted, undrained
  • 1/4 teaspoon salt
  • 8 medium fresh basil leaves
Instructions:
  • Preheat your oven to 400°F. Line a 15x10x1-inch pan with foil and spray it with cooking spray.
  • Combine Meatball ingredients in a large bowl, ensuring they are thoroughly mixed. Use a rounded tablespoon measure to shape the mixture into 20 meatballs (1 1/2-inch in size) and arrange them in a baking pan. Bake for 15 to 18 minutes until meatballs are cooked through and reach an internal temperature of at least 165°F.
  • While that's cooking, let's create a flavorful sauce. Heat oil in a 2-quart saucepan over medium heat, then add crushed garlic and 1/4 teaspoon pepper flakes; sauté for 2 to 3 minutes until the garlic is aromatic. Next, toss in the tomatoes, 1/2 teaspoon salt, and fresh basil leaves; bring to a gentle simmer. Let it cook for 4 to 5 minutes until it slightly thickens. After taking it off the heat, let it cool for 5 minutes before carefully transferring to a blender. Remember to vent the blender top and cover with a kitchen towel before blending the sauce for 40 to 45 seconds until the garlic and basil are perfectly combined with the tomatoes. Serve the warm sauce alongside the meatballs for a delicious meal.
