Spicy lamb flatbread pizzas

Cheeseless pizza with flavorful spices for a delicious and healthy twist.
Ingredients:
  • Olive oil spray
  • 1 red onion, halved, thinly sliced
  • 1 red capsicum, halved, deseeded, thinly sliced
  • 300g lean lamb mince
  • 2.50 gm ground cumin
  • 2.50 gm paprika
  • 1 tsp ground coriander
  • 40.00 ml currants
  • 40.00 ml chopped fresh continental parsley
  • 80ml (1/3 cup) passata (tomato pasta sauce)
  • 2 pieces wholemeal Lebanese bread
  • 1 bunch rocket, trimmed, shredded
  • 130g (1/2 cup) low-fat natural yoghurt
Instructions:
  • Preheat your oven to a piping hot 220°C and pop in those 2 large baking trays to heat up for 10 minutes.
  • Heat a large non-stick frying pan over medium heat, then spray with olive oil. Cook onion and capsicum for 4-5 minutes until soft. Increase heat to high, add mince, and cook for 4-5 minutes until browned. Stir in cumin, paprika, and coriander, and cook for 1-2 minutes until fragrant. Remove from heat and stir in currants and parsley.
  • Spread the passata and mince mixture evenly on the bread slices, then place them on the trays. Bake for 8-10 minutes, or until the bases are crisp.
  • Slice each pizza into quarters. Garnish with fresh arugula and serve alongside the yogurt.
