Sweet honey and juicy mango meet savory tamari and spicy hot sauce for a perfect balance of flavors.
Ingredients:
  • 1 clove garlic, minced
  • 2 cups cubed peeled sweet potatoes
  • 2 tablespoons vegetable oil
  • 1 pound skinless, boneless chicken breast halves - cubed
  • 6 tablespoons tamari soy sauce
  • 0.75 cup water
  • 3 tablespoons honey
  • 3 tablespoons hot sauce, or to taste
  • 1 ripe mango, peeled and cubed
  • 0.25 teaspoon crushed red pepper flakes
  • 1 teaspoon cornstarch
  • 1 tablespoon warm water
Instructions:
  • Start by dropping those sweet potatoes into a saucepan, covering them with water, and simmering over medium-high heat until they're nice and tender, which should take around 15 minutes. After that, just drain them and set them aside for the next step.
  • Heat 2 tablespoons of vegetable oil in a skillet over medium-high heat. Cook the chicken until no longer pink in the center, approximately 5 minutes. Set aside. Add garlic to the skillet and cook until fragrant. Pour in tamari, 3/4 cup water, honey, and hot sauce. Simmer, then add sweet potato, chicken, mango, and red pepper flakes. Cook until hot. Dissolve cornstarch in 1 tablespoon of water, then stir into the mixture until thickened.
