Spicy garlic-marinated chicken cooked with sweet mango for a flavorful kick.
Ingredients:
  • 1 (16 ounce) bag frozen mango chunks
  • 4 (5 ounce) skinless, boneless chicken breast halves
  • salt to taste
  • 1 cup tequila
  • 0.25 cup Louisiana-style hot sauce, or to taste
  • 1 tablespoon cider vinegar
  • 1 clove garlic, or more to taste, minced
  • 0.25 cup vegetable oil
  • 1 large white onion, cut into large chunks
Instructions:
  • Let the mango sit on a plate at room temperature for about 30 minutes until thawed. Gently mash it and set aside.
  • Once the mango is almost thawed, season the chicken with salt and tenderize it with a fork. Place the chicken in a spacious glass or ceramic bowl. Pour the tequila over the chicken and evenly coat by gently moving it around with the fork. Let it marinate until tender, approximately 10 minutes.
  • Mix in ripe, juicy mango chunks into the chicken-tequila mixture, along with a kick of hot sauce, tangy cider, and aromatic garlic. Allow the flavors to meld for a minimum of 10 minutes, or longer for even more delicious results.
  • Heat oil in a large pan over medium-high heat. Add onion and caramelize for about 3-4 minutes with the lid on. Increase heat to high, then add the chicken-mango mixture and cook for roughly 5 minutes until the alcohol evaporates. Reduce heat, cover, and simmer for 5-8 minutes until chicken is fully cooked and reaches an internal temperature of at least 165 degrees F (74 degrees C).
  • Cut the chicken breasts into large pieces, then toss them together.
