Spicy Tequila-Lime Tomato Soup

Spicy tequila-infused tomato soup with a kick from jalapeno peppers.
Ingredients:
  • 2 tablespoons extra-virgin olive oil
  • 1 large onion, cut into chunks
  • 4 stalks celery, cut into chunks
  • 5 cloves garlic, chopped
  • 1 green bell pepper, seeded and cut into chunks
  • 2 jalapeno peppers, seeded and chopped
  • 1 (28 ounce) can fire-roasted diced tomatoes
  • 2 cups vegetable stock
  • 1 (15 ounce) can crushed tomatoes
  • 1 lime, juiced
  • 3 tablespoons chopped cilantro
Instructions:
  • In a large stockpot over medium heat, sauté onion, celery, and garlic in olive oil until softened, for 5 to 10 minutes. Then add green bell pepper and jalapeno peppers to the pot, cooking and stirring until peppers are softened, about 5 minutes.
  • Simmer the tequila with the vegetable mixture until slightly reduced for 3 to 4 minutes. Add fire-roasted tomatoes, vegetable stock, crushed tomatoes, lime juice, salt, and pepper to the tequila-vegetable mixture and bring to a boil. Simmer on medium-low heat for 20 minutes until flavors blend. Stir in cilantro right before serving.
