Spicy minestrone with garlic croutons

Elevate your soup with a decadent touch using bottled pasta sauce for added depth and flavor!
Ingredients:
  • 9.20 gm olive oil
  • 3 shortcut bacon rashers, trimmed, chopped
  • 500g jar spicy pepper pasta sauce
  • 500.00 ml beef consomme
  • 400g can butter beans, drained, rinsed
  • 250.00 ml frozen mixed vegetables
  • 82.50 ml dried risoni
  • 3 slices sourdough garlic bread, cut into large cubes
  • Chopped fresh parsley leaves, to serve
Instructions:
  • In a large heavy-based saucepan over medium heat, heat oil until shimmering. Add bacon and cook, stirring occasionally, until golden brown, about 5 minutes. Stir in pasta sauce, consomme, and 1 1/2 cups cold water. Bring the mixture to a boil, then reduce heat to low and simmer for 5 minutes.
  • Combine beans, vegetables, and risoni in the pot. Season with salt and pepper. Simmer for 15 minutes, stirring occasionally, until the risoni is tender.
  • Heat a large non-stick frying pan over medium heat, then cook the garlic bread, turning occasionally, for 6 to 8 minutes until it is golden and heated through.
  • Garnish minestrone with flavorful garlic bread and fresh parsley before serving.
