Spicy mushroom and tomato salad

Ingredients:
  • olive oil cooking spray
  • 500g cherry tomatoes
  • 400g Swiss brown mushrooms, quartered
  • 1 long red chilli, deseeded, thinly sliced
  • 80g mixed salad leaves
  • 40.00 ml red wine vinegar
  • 20.00 ml chopped fresh basil leaves
Instructions:
  • Prepare the chargrill or barbecue plate by spraying it with oil and heating it over high heat. Cook the tomatoes, flipping occasionally, for about 5 minutes until the skins begin to blister.
  • Combine tomatoes, mushrooms, capers, chili, and salad leaves in a bowl.
  • In a jar with a lid, combine oil, garlic, vinegar, basil, salt, and pepper. Shake well. Pour over tomatoes and toss. Serve.
