Spicy tomato pork chops with green beans and mushrooms - one-pan wonder that's simple and delicious!
Ingredients:
  • 2 tablespoons vegetable oil
  • 4 lean boneless pork chops
  • 1.5 teaspoons rosemary
  • 0.25 teaspoon garlic powder
  • 0.5 cup water
  • 2 tablespoons white wine vinegar
  • 1 teaspoon sugar
  • 1 bay leaf
  • 2 (11.5 ounce) cans tomato juice
  • 1.5 tablespoons hot pepper sauce
  • 2 (14.5 ounce) cans cut green beans, drained
  • 1 (4 ounce) jar sliced mushrooms, drained
Instructions:
  • In a large skillet over medium heat, sear the pork chops until golden. Season with fragrant rosemary and garlic powder. In a bowl, combine water, vinegar, sugar, and a bay leaf. Pour the mixture over the pork chops, then cover and simmer on low for 10 minutes.
  • Combine tomato juice and hot pepper sauce in a skillet. Season pork chops with salt and pepper, cover, and cook for 35 minutes until pork reaches 145°F (63°C) internal temperature.
  • Discard the bay leaf from the skillet. Combine green beans and mushrooms with the tomato juice mixture, and cook until warmed. Serve by topping pork chops with the green beans and mushrooms, and drizzling with the tomato juice mixture.
