Marinated pork chops with panzanella

Elevate pork chops with flavorful marinade and pair with vibrant panzanella salad.
Ingredients:
  • 4 pork loin chops
  • 40.00 gm white wine
  • 1 garlic clove, crushed
  • 1 tsp dried oregano
  • Pinch dried red chilli flakes
  • 56.88 gm extra virgin olive oil
  • 6 x 1.5cm thick pane di casa bread slices
  • 4 tomatoes, coarsely chopped
  • 1 Lebanese cucumber, coarsely chopped
  • 1 red capsicum, coarsely chopped
  • 1 celery stick, thinly sliced
  • 82.50 ml pale celery leaves
  • 1/4 small red onion, coarsely chopped
  • 20.00 ml red wine vinegar
Instructions:
  • 1. In a shallow dish, arrange the chops. Combine wine, garlic, oregano, chili, and 1 tablespoon of oil in a small bowl. Pour the mixture over the pork. Cover and refrigerate for at least 1 hour, or overnight, for optimal marination.
  • Toast the bread in a toaster until lightly golden, then chop it coarsely. Combine it in a large bowl with tomato, cucumber, bell pepper, celery, onion, vinegar, and the rest of the olive oil. Season with salt and pepper, then mix everything together using your hands until well combined.
  • Preheat a large non-stick frying pan over medium heat. Sear the pork for 3 minutes on each side for a perfectly cooked piece of meat.
  • Arrange the chops and salad on individual serving plates.
