Elevate your BBQ game with zesty Caribbean pork chops topped with fresh papaya salsa.
Ingredients:
  • 18.40 gm vegetable oil
  • 8.00 gm brown sugar
  • 2 tsp ground allspice
  • 1 tsp dried thyme
  • Pinch of cayenne pepper
  • 4 Pork Cutlets
  • 20g baby spinach leaves
  • 20g baby rocket leaves
  • 1/2 red papaya, peeled, seeded, finely chopped
  • 1/2 small red onion, finely chopped
  • 42.00 gm lime juice
  • 62.50 ml coriander leaves
Instructions:
  • In a medium bowl, mix together the papaya, onion, cucumber, lime juice, and coriander. Allow the flavors to meld by setting it aside for 10 minutes.
  • Preheat a barbecue grill or chargrill to medium-high heat. In a large bowl, mix together oil, sugar, allspice, thyme, and cayenne pepper. Add the pork and coat well with the mixture. Grill the pork for 3 minutes on each side or until fully cooked.
  • Place the spinach and rocket beautifully on a large platter. Drizzle the papaya mixture over them. Add the pork on top and serve with lime wedges.
