Spicy Caribbean-inspired salmon fritters with jalapeño, parsley, and onion for a flavorful twist.
Ingredients:
  • 2 cups whole wheat flour
  • 1 tablespoon chopped fresh parsley
  • 1 teaspoon ground thyme
  • 1 pinch ground cumin
  • 1 medium onion, finely chopped
  • 1 jalapeno pepper, finely chopped
  • 2 (14.75 ounce) cans salmon, drained and flaked
  • 2 large eggs, or as needed
  • 1 cup water
  • 0.25 cup vegetable oil for frying, or as needed
Instructions:
  • In a large bowl, combine flour, parsley, baking powder, salt, thyme, and cumin. Mix in chopped onion and jalapeño until well incorporated. Mash salmon and mix in eggs until combined. Stir in water until a thick batter forms.
  • Heat a 1/4-inch layer of oil in a frying pan over low-medium heat.
  • In batches of 3, spoon 1 tablespoon of batter for each fritter into hot oil; fry until golden brown, about 3 to 5 minutes per side. Place on paper towel-lined plate. Repeat until you have approximately 16 fritters in total.
