Delicious shrimp and kidney bean soup with a spicy tomato kick, creamy mushroom base, perfect for impressing guests. Pair with Garlic Toast for a satisfying meal.
Ingredients:
  • 2 tablespoons olive oil
  • 3 cloves garlic, chopped
  • 1 medium celery rib, chopped
  • 2 green onions, chopped
  • 1 (15 ounce) can red kidney beans, drained
  • 1 (10 ounce) can tomatoes with green chilies
  • 1 (10 ounce) can condensed cream of mushroom soup
  • 0.75 cup water
  • 1 sprig fresh dill
  • 12 ounces medium shrimp - peeled and deveined
Instructions:
  • In a large saucepan, heat the oil over medium heat. Add garlic, celery, and green onions. Sauté until tender, around 3 minutes. Add beans, tomatoes, cream of mushroom soup, and water. Bring to a boil. Mix in dill, then reduce heat to medium and simmer for 10 minutes. Lastly, add shrimp and continue simmering until pink, about 5 minutes.
