Spicy garlic shrimp and tomato pasta with optional extra heat from red pepper flakes.
Ingredients:
  • 4 cups penne pasta
  • 5 teaspoons olive oil
  • 4 cloves garlic, minced
  • 1 medium onion, diced
  • 1 (16 ounce) can diced tomatoes with green chilies, drained
  • 0.5 lemon, juiced
  • 1 pound uncooked medium shrimp, peeled and deveined
  • 0.25 cup chopped fresh parsley
  • salt, to taste
  • ground black pepper, to taste
  • 1 pinch crushed red pepper flakes, or to taste
  • 1 teaspoon grated Parmesan cheese, or to taste
Instructions:
  • Fill a large pot with lightly salted water and bring to a vigorous boil. Add the penne to the boiling water and cook uncovered until al dente, about 11 minutes. Drain the pasta well in a colander in the sink.
  • 1. Start by heating olive oil in a skillet over medium heat. Saute garlic and onion until the onion softens and turns translucent, about 5 minutes. 2. Add tomatoes and simmer until heated through, around 5 minutes. 3. Introduce lemon juice and shrimp, and cook until shrimp turns bright pink and no longer transparent in the center, roughly 5 minutes. 4. Stir in parsley, and season with salt, pepper, and red pepper flakes. 5. Serve the shrimp and sauce over cooked penne pasta and top with grated Parmesan cheese.
