Quick and easy spicy shrimp étouffée with tomato paste, parsley, hot pepper sauce, and cayenne made effortlessly in the microwave.
Ingredients:
  • 0.25 cup margarine
  • 0.5 cup chopped green onion
  • 0.5 cup chopped green bell pepper
  • 4 cloves minced garlic
  • 0.5 cup celery, diced
  • 0.5 cup chopped fresh parsley
  • 3 tablespoons tomato paste
  • 1 (10.75 ounce) can condensed cream of chicken soup
  • 1 pound cleaned shrimp
  • salt to taste
  • 0.25 teaspoon hot pepper sauce to taste
  • 0.25 teaspoon cayenne pepper
Instructions:
  • In a 2-quart microwave-safe dish, mix butter, onion, green onion, bell pepper, garlic, and celery. Microwave on High for 8-9 minutes.
  • Combine parsley, tomato paste, soup, shrimp, salt, hot pepper sauce, and cayenne in a pot. Simmer on High for 5 minutes. Continue to cook for an additional 5 minutes until the mixture thickens. Serve over fluffy white rice.
