Make a speedy coconut curry sauce in the microwave for these flavorful grilled shrimp skewers - a perfect blend of sweetness and spice!
Ingredients:
  • 60 uncooked peeled deveined medium shrimp (about 2 pounds), thawed if frozen
  • 1/4 cup olive or vegetable oil
  • 1 teaspoon red pepper sauce
  • 1 cup canned coconut milk (not cream of coconut)
  • 2 teaspoons curry powder
  • 2 teaspoons cornstarch
  • 1 teaspoon honey
  • 1/4 teaspoon salt
Instructions:
  • Begin by submerging twenty 6-inch wooden skewers in water for 30 minutes to ensure they don't burn. While they soak, prepare your grill for direct heat and start creating the flavorful Coconut-Curry Sauce.
  • In a large bowl, combine shrimp with oil and pepper sauce, ensuring each shrimp is evenly coated. Skewer 3 shrimp on each skewer.
  • Grill the kabobs over medium heat until the shrimp are pink and firm, 4 to 6 minutes. Serve with sauce.
  • Combine all sauce ingredients in a small microwave-safe bowl. Microwave on high for approximately 2 minutes, stirring every 30 seconds, until the mixture bubbles and thickens.
