Impress guests with zesty grilled shrimp and flavorful dips - perfect for parties or indoor gatherings!
Ingredients:
  • 4 cups water
  • 2 tablespoons kosher (coarse) salt
  • 2 tablespoons sugar
  • 1 tablespoon crushed red pepper flakes
  • 3 cloves garlic, sliced
  • 1 teaspoon paprika
  • 30 uncooked deveined peeled shrimp (1 1/4 lb of 26-30 count size), thawed if frozen, tail shells removed
  • 1/3 cup seafood cocktail sauce
  • 1/3 cup refrigerated honey mustard dressing
  • 1/3 cup spicy hot peanut sauce (from 7-oz bottle)
Instructions:
  • In a 2-quart saucepan, bring 1 cup of water to a boil. Stir in salt, sugar, red pepper flakes, garlic, and paprika until salt is dissolved.
  • Take the mixture off the heat and stir in the remaining 3 cups of cold water. Transfer the shrimp into a large resealable plastic bag and pour the brine over the shrimp. Seal the bag, removing any excess air, and place it in a dish or container. Refrigerate for 1 hour.
  • Preheat a gas or charcoal grill. Take the shrimp out of the brine mixture and dispose of the brine. Thread the shrimp onto 6 (12-inch) metal skewers, ensuring there is a 1/4-inch space between each shrimp.
  • Grill the shrimp over medium heat with the grill covered for 5 to 6 minutes, flipping once, until they turn pink.
  • Place cocktail sauce, dressing, and peanut sauce in individual small bowls. Display the bowls on a platter and add the shrimp to the same platter.
