Spicy pickled cauliflower with a flavorful brine and a kick of heat.
Ingredients:
  • 2 cups water
  • 1 cup seasoned rice vinegar (such as Nakano®)
  • 0.25 cup white sugar
  • 2 tablespoons kosher salt
  • 1 teaspoon ground turmeric
  • 1 (2 pound) cauliflower, cut into florets
  • 1.5 teaspoons kosher salt
  • 9 small Thai chile peppers, tops trimmed
  • 6 cloves garlic, peeled
  • 2 teaspoons whole black peppercorns
Instructions:
  • In a saucepan, mix water, rice vinegar, sugar, salt, and turmeric. Simmer gently until sugar and salt dissolve, approximately 5 minutes. Remove from heat and set aside.
  • In a bowl, gently coat cauliflower florets with kosher salt and let sit for approximately 30 minutes.
  • Wash cauliflower and distribute florets, chile peppers, garlic, and black peppercorns evenly into 3 pint-sized jars, pressing down to pack tightly. Pour brine into the jars, ensuring the cauliflower is fully covered.
  • Cover the jars with lids, transfer to the refrigerator, and let marinate for 2 to 3 days before serving. For optimal flavor, wait about 1 week before enjoying.
