Quick and easy 30-minute meal: Juicy lamb cutlets marinated in sticky plum sauce with chili, garlic, and ginger for extra flavor.
Ingredients:
  • 185ml plum sauce
  • 1 tsp ginger, finely grated
  • 1 tsp dried chilli flakes
  • 1/2 tsp sesame oil
  • 12 Lamb Cutlets
  • 450g hokkien or rice noodles
  • 9.20 gm peanut oil
  • 300g Superfood Stir-fry
  • Toasted sesame seeds, to serve
  • Coriander leaves, to serve
Instructions:
  • Mix plum sauce, garlic, ginger, chili flakes, and sesame oil in a jug. Place lamb cutlets in a dish and coat with two-thirds of the marinade, saving the rest. Let it marinate for 10 minutes.
  • Preheat a barbecue grill or chargrill over medium-high heat. Grill lamb cutlets for 2 minutes on each side for medium rare or until cooked to your desired doneness. Transfer the cooked cutlets to a plate, cover with foil, and let them rest for 5 minutes before serving.
  • While your noodles cook per the instructions on the packet, heat oil in a wok on high heat. Stir in your stir-fry vegetables and cook for 2 minutes. Add the noodles and reserved marinade, then stir-fry for an extra 2-3 minutes until everything is heated through.
  • Serve the stir-fry in individual dishes, garnish with lamb cutlets, and sprinkle with sesame seeds and fresh coriander leaves.
