Spicy Pork Carnita Soup (Cooking for 2)

Spicy savory soup for two, ready in 35 minutes from Betty Crocker's Right-Size Recipes cookbook - perfect weeknight meal.
Ingredients:
  • 1 tablespoon olive oil
  • 1 medium onion, halved, thinly sliced
  • 1 green bell pepper, cut into strips
  • 1 cup Progresso™ Classic chicken broth (from 32-oz carton)
  • 1/2 cup beer
  • 1 teaspoon chili powder
  • 1/4 teaspoon salt
  • 1/4 teaspoon ground cumin
  • 1 can (10.5 oz) diced tomatoes with green chiles, undrained
  • 2 boneless pork loin chops, trimmed of fat and cut into 1/2-inch cubes (about 8 oz)
  • 1 tablespoon chopped fresh cilantro leaves
  • 1 tablespoon fresh lime juice
  • Cilantro leaves, if desired
Instructions:
  • Heat olive oil in a 2-quart saucepan over medium heat. Sauté onion and pepper for 4 to 5 minutes until tender. Add chicken broth, beer, chili powder, salt, cumin, and tomatoes; stir to combine.
  • Bring to a boil then let it simmer covered for 5 minutes. Add pork and continue to simmer covered for 5 to 8 minutes until pork is cooked through. Stir in chopped cilantro and lime juice, then top with cilantro leaves as garnish.
