Faux Smoked Pulled Pork (Carnitas)

Create smoky, tender carnitas by seasoning pork with spice rub, slow-cooking until pull-apart perfection with a touch of liquid smoke.
Ingredients:
  • 6 tablespoons brown sugar
  • 2 tablespoons garlic powder
  • 2 tablespoons chili powder
  • 2 tablespoons paprika
  • 2 tablespoons dried oregano
  • 2 tablespoons onion powder
  • 1 tablespoon mustard seed
  • 1 tablespoon ground black pepper
  • 0.5 teaspoon ground cumin
  • 0.5 teaspoon ground coriander
  • salt to taste
  • 1 (3 pound) pork butt roast, or more to taste
  • 3 tablespoons vegetable oil
  • 2 cups water
  • 2 tablespoons liquid smoke flavoring
  • 2 dried chipotle chile peppers, or to taste
Instructions:
  • Combine a medley of brown sugar, garlic powder, chili powder, paprika, oregano, onion powder, mustard seed, black pepper, cumin, coriander, and salt in a small bowl.
  • Massage the pork roast generously with the brown sugar mixture.
  • In a large skillet over high heat, sizzle the pork roast in oil until golden brown on each side, 3 to 5 minutes per side.
  • Place the pork in a slow cooker and pour in the water, liquid smoke, and chipotle peppers.
  • Slow cook the pork until tender for about 6 hours. Remove pork from the pot and shred using tongs on a cutting board.
