Cozy vegan noodle soup with hearty seitan, carrots, and pasta - just like mom's comforting classic!
Ingredients:
  • 1.5 cups chopped carrots
  • 1 cup chopped celery
  • 0.5 yellow onion, chopped
  • 1 leek, chopped
  • 1 shallot, diced
  • 6 cups vegetable broth
  • 3 teaspoons vegetable bouillon (such as Better Than Bouillon®)
  • 0.25 cup parsley
  • 2 bay leaves
  • 0.5 teaspoon dried thyme
  • 1 (16 ounce) package rotini pasta
  • 1 (16 ounce) package chicken-flavored seitan
Instructions:
  • Cook carrots, celery, onion, leek, and shallot in a soup pot over medium-high heat until onion is translucent and carrots soften, about 7 to 10 minutes.
  • Pour the flavorful broth over the vibrant vegetables in the pot and bring to a vigorous boil. Stir in the aromatic bouillon until fully dissolved, then lower heat to a gentle simmer.
  • Sprinkle in fresh parsley, fragrant bay leaves, and aromatic thyme, then season with a pinch of salt and a dash of pepper. Simmer until the carrots are tender, around 10 minutes longer.
  • Cook the pasta and seitan together until the pasta is perfectly al dente, approximately 7 to 10 minutes more.
