Caribbean-inspired spicy marinated chicken breasts.
Ingredients:
  • 0.33333298563957 cup olive oil
  • 3 tablespoons distilled white vinegar
  • 1.5 tablespoons lime juice
  • 1 tablespoon white sugar
  • 1 teaspoon dried thyme leaves
  • 0.75 teaspoon ground allspice
  • 0.5 teaspoon cinnamon
  • 0.5 teaspoon salt
  • 0.33333298563957 teaspoon ground cayenne pepper
  • 1 scotch bonnet chile pepper, minced
  • 0.25 cup minced green onions with tops
  • 2 cloves garlic, minced
  • 4 skinless, boneless chicken breast halves
Instructions:
  • Combine the olive oil, vinegar, lime juice, sugar, thyme, allspice, cinnamon, salt, and cayenne pepper in a large dish. Add the scotch bonnet pepper, green onions, and garlic. Poke the chicken all over with a fork, then add it to the dish. Cover and refrigerate for up to 24 hours, flipping occasionally.
  • Preheat the grill to high heat.
  • Prep the grill grate with a light coating of oil. Grill the marinated chicken for 8 minutes on each side until the juices run clear, then discard the marinade.
