Spice up your breakfast with flavorful cumin, coriander, turmeric, and chili powder seasoned home fries.
Ingredients:
  • 2 medium potatoes, scrubbed
  • 4 tablespoons vegetable oil, divided
  • 0.5 teaspoon ground cumin
  • 0.5 teaspoon ground coriander
  • 0.5 teaspoon turmeric powder
  • 0.5 teaspoon chili powder
  • 3 large eggs, beaten
Instructions:
  • Assemble all the ingredients.
  • Pierce potato skins with a fork and microwave on high until tender, about 7 to 8 minutes. Allow to cool slightly, then peel and dice into small cubes.
  • In a skillet over medium-high heat, warm 2 tablespoons of oil. Add cumin, coriander, turmeric, chili powder, and 1/2 teaspoon of salt, then mix in the potatoes. Cook until crispy and golden brown, stirring occasionally, for 5 to 10 minutes.
  • Heat 2 tablespoons of oil in a skillet over medium-high heat. Add the eggs and cook until set, about 5 minutes. Season with salt and pepper, then serve with potatoes.
