Delicious Asian noodles with pork, pumpkin, and spicy Korean chile paste.
Ingredients:
  • 2 teaspoons vegetable oil
  • 8 ounces ground pork
  • salt and freshly ground black pepper to taste
  • 0.25 teaspoon smoked paprika
  • 0.3333 cup sliced green onions
  • 2 tablespoons hoisin sauce
  • 6 ounces bucatini (dry)
  • 1 tablespoon reserved oil from cooking pork
  • 0.5 cup pumpkin puree
  • 2 tablespoons gochujang (Korean hot pepper paste)
  • 0.5 cup sliced green onions
  • 1 teaspoon sesame oil
  • 2 tablespoons diced hot chile peppers
  • 1 lime, juiced
  • 0.25 cup chopped fresh cilantro
Instructions:
  • Prepare all your delicious, fresh ingredients.
  • In a skillet, heat oil over medium-high heat. Add pork and break into small pieces. Season with salt, pepper, and smoked paprika. Cook and stir until pork is crumbled and browned, about 5 minutes.
  • Reduce heat to medium and introduce the aromatic combination of garlic and green onions. Let them sizzle for 30 seconds to release their enticing fragrance. Stir in the hoisin sauce and cook until it beautifully coats each piece of pork, taking 1 to 2 minutes. Finally, elegantly transfer the savory pork topping to a bowl.
  • Discard excess cooking grease, keeping 1 tablespoon in the skillet. Introduce pumpkin puree, gochujang, green onions, sesame oil, and chili peppers. Sauté over medium heat for 2 minutes, stirring continuously.
  • While waiting, heat a sizable pot of lightly salted water until it boils. Cook the bucatini in the boiling water, stirring occasionally, until it is tender yet firm to the bite, approximately 10 minutes. Using a slotted spoon, transfer the noodles to the skillet with the pumpkin sauce. Remember to save around 1/2 cup of the pasta cooking water.
  • Drizzle fresh lime juice over the noodles, then pour in about 2 tablespoons of pasta water and toss everything together until the noodles are evenly coated with the sauce. Gradually mix in more pasta water as needed until the sauce reaches your desired thickness.
  • Remove from heat and gently fold in fresh cilantro. Plate the noodles and generously sprinkle with seasoned ground pork.
