Ingredients:
  • Olive oil spray
  • 1 large onion, chopped
  • 7.50 gm ground cumin
  • 1 tsp crushed garlic, optional
  • 1-2 tsp chopped chilli, plus extra to serve
  • 2 large gourmet tomatoes, chopped
  • 210g lentils
  • 1.25l chicken stock
  • Light cream, to serve
  • Coriander leaves, to serve
Instructions:
  • In a large heavy-based saucepan over medium heat, lightly spray the base with olive oil and add the onion. Cook for 3-4 minutes until the onion is lightly browned.
  • Sauté cumin, garlic, and chili for 1-2 minutes, then mix in the tomatoes and red lentils until well blended.
  • Add the stock and bring it to a boil, stirring frequently to prevent the lentils from sticking. Lower the heat, simmer without a cover for 30-40 minutes until the lentils are tender. Serve in bowls, top with extra chili and light cream, and garnish with fresh coriander leaves. Serve promptly.
