Elevate your pasta with rich roasted tomatoes, creamy ricotta, and savory Italian sausage for an irresistibly flavorful sauce.
Ingredients:
  • 2.5 pounds Roma tomatoes, cored and halved lengthwise
  • 5 tablespoons olive oil, divided
  • 2 tablespoons minced garlic
  • 1.25 teaspoons salt, divided
  • 0.5 teaspoon ground black pepper
  • 2 tablespoons Italian seasoning
  • 2 teaspoons dried rosemary
  • 2 teaspoons dried parsley
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 0.25 teaspoon red pepper flakes
  • 19 ounces ground hot Italian sausage
  • 0.5 sweet onion, halved and thinly sliced
  • 1 (8 ounce) container ricotta cheese
  • 1 ounce grated Parmesan cheese
Instructions:
  • Preheat the oven to 300°F (150°C) and line a rimmed baking sheet with parchment paper.
  • Combine tomatoes, 4 tablespoons of olive oil, minced garlic, 1/4 teaspoon of salt, and a pinch of pepper in a bowl. Arrange tomatoes cut-side up on the baking sheet.
  • Bake in the preheated oven for 2 hours until soft and juicy. Remove and then increase oven temperature to 400 degrees F (200 degrees C).
  • Evenly distribute the remaining 1 teaspoon of salt, sugar, Italian seasoning, rosemary, basil, parsley, garlic powder, onion powder, and red pepper flakes over the tomatoes. Finish by drizzling the remaining 1 tablespoon of olive oil on top of the tomatoes.
  • Place the baking sheet back in the oven and bake for another 20 minutes.
  • Preheat a frying pan over medium heat. Sauté the sausage and onion until the sausage is cooked through and the onion is softened, around 7 minutes. Set aside.
  • Combine the roasted tomatoes and their juices in a food processor and blend to your preferred consistency. Add the ricotta and Parmesan cheeses, then pulse until well combined. Transfer the tomato sauce to a bowl and gently fold in the sausage-onion mixture.
