Ingredients:
  • 375g dried rigatoni pasta
  • 18.20 gm extra virgin olive oil
  • 80g spicy chorizo salami, chopped
  • 3 garlic cloves, sliced
  • 2 long red chillies, thinly sliced
  • Mutti Polpa Finely Chopped Tomatoes 400g
  • Fresh basil leaves, to serve
  • Parmesan, grated to serve
Instructions:
  • Prepare the pasta as directed on the package.
  • Heat oil in a large, deep frying pan over medium-high heat. Add salami, garlic, and chilli. Sauté for 3-4 minutes until salami is crisp. Stir in tomatoes and simmer until slightly thickened, about 3-4 minutes.
  • After draining the pasta, set aside 1/4 cup of the cooking water. Mix it in with the salami and cook for 1 minute until the sauce thickens and coats the pasta. Season with salt and pepper, then toss everything together. Serve with a sprinkle of fresh basil and Parmesan cheese.
