Spicy salami cups with ricotta, olives, and chili - a fiery party appetizer!
Ingredients:
  • 12 slices hot salami
  • 62.50 ml marinated fetta, reserving 1 tbsp marinating oil
  • 120.00 gm smooth ricotta
  • 62.50 ml pitted kalamata olives, chopped
  • 62.50 ml sun-dried tomatoes in oil, drained, chopped
  • 20.00 ml chopped fresh oregano leaves, plus extra leaves to serve
  • 1 long red chilli, chopped
  • Lemon zest, to serve
Instructions:
  • Preheat your oven to 220C/200C fan-forced and lightly grease a 12-hole muffin pan with a 1/3-cup capacity.
  • Place a slice of flavorful salami snugly into each waiting pan cavity. Let them bake for 8 to 10 minutes, or until the salami achieves a perfect golden-brown hue.
  • Crumble feta into a bowl, then mix in ricotta, olives, tomatoes, oregano, and chili. Season with pepper, then divide the mixture evenly among the salami cups. Bake for an additional 2 to 3 minutes until the filling is heated through. Transfer cups to a wire rack and allow them to cool for 5 minutes until crispy.
  • On a serving platter, arrange cups and drizzle with reserved marinating oil. Sprinkle lemon zest and extra oregano on top. Serve with elegance.
