Prepare comforting casserole ahead for a week of effortless meals.
Ingredients:
  • 36.40 gm olive oil
  • 800g beef chipolata sausages or pork chipolata sausages
  • 4 onions, thinly sliced
  • 250ml beef stock
  • 520g pasta sauce
  • 440ml can Guinness or other stout beer
  • 64.00 gm (1/3 cup) brown sugar
  • 2 bay leaves
  • 800g canned borlotti beans, rinsed, drained
  • Chopped parsley, to serve
  • Potatoes, to serve
Instructions:
  • Heat your oven to 180°C.
  • In a large flameproof casserole, heat the oil over medium-high heat. Brown the sausages all over for 5-6 minutes. Set aside. If needed, remove excess oil from the pan, then cook onion over medium-low heat until soft, about 5-6 minutes. Add stock, sauce, beer, sugar, and bay leaves. Bring to a boil, then reduce heat to medium-low. Return sausages to the pan with beans. Bake in the oven for 40 minutes until thick. Stir in chopped parsley and serve with baked potatoes, if preferred.
