Try a delicious brunch bake with asparagus, potatoes, sausage, and three cheeses.
Ingredients:
  • 1 lb bulk Italian sausage
  • 4 cups frozen potatoes O'Brien with onions and peppers (from 28-oz bag), thawed*
  • 1 1/2 cups shredded Colby-Monterey Jack cheese (6 oz)
  • 1 box (9 oz) frozen asparagus cuts, thawed**
  • 4 eggs
  • 3/4 cup milk
  • 2 tablespoons shredded Parmesan cheese (1/2 oz)
Instructions:
  • Preheat oven to 350°F. Grease an 8-inch square (2-quart) glass baking dish. Cook sausage in an 8-inch skillet over medium heat for 8 to 10 minutes, stirring occasionally, until no longer pink.
  • In a baking dish, alternate layers of thawed potatoes, Colby-Monterey Jack cheese, cooked sausage, thawed asparagus, and repeat with the remaining potatoes and cheese.
  • In a medium bowl, whisk together eggs and milk until smooth. Pour the mixture evenly over the potatoes.
  • Cover the dish tightly with foil and bake for 1 hour. Remove the foil, sprinkle with Parmesan cheese, and bake uncovered for an additional 15 to 20 minutes, or until a knife inserted in the center comes out clean. Allow it to stand for about 5 minutes before serving.
