Spicy Italian sausage and potato soup with a kick of cayenne pepper.
Ingredients:
  • 2 cloves garlic, peeled
  • 0.5 red onion
  • 1 pound ground Italian sausage
  • 10 large russet potatoes, peeled and cubed
  • seasoning salt to taste
  • 0.5 teaspoon freshly ground black pepper
  • 1 tablespoon cayenne pepper, or to taste
  • 1 (12 fluid ounce) can evaporated milk
  • 0.25 cup butter
  • 1 teaspoon dried parsley
Instructions:
  • Puree the garlic and onion in a blender or food processor. Heat the mixture with Italian sausage in a skillet over medium heat until sausage is cooked through.
  • In a large soup pot, combine the sausage mixture with potatoes and enough water to cover. Add seasoned salt, black pepper, and cayenne pepper to taste. Bring to a boil over medium-high heat until potatoes are tender. Stir in butter, evaporated milk, and parsley until the butter melts. Serve hot with bread or crackers.
