Spicy Southwest Chicken Kabobs

30-minute grilled Southwest chicken and vegetable kabobs for a delicious dinner.
Ingredients:
  • 1 tablespoon garlic pepper
  • 2 tablespoons olive or vegetable oil
  • 4 small ears fresh corn, husks removed
  • 1 1/2 pounds boneless, skinless chicken breasts, cut into 1-inch cubes
  • 2 medium yellow or red bell peppers, cut into 1 1/2-inch pieces
  • 3/4 cup ranch dressing
  • 1 canned chipotle chili in adobo sauce, chopped
Instructions:
  • Prepare the grill for direct heat. Combine garlic pepper and oil. Cut each ear of corn into 3 pieces. Skewer chicken, corn, and bell peppers alternately on metal skewers. Brush kabobs with the oil mixture before grilling.
  • Grill the kabobs over medium heat, turning occasionally, until the chicken is cooked through, about 15-20 minutes.
  • Combine the dressing and chili, then enjoy with the kabobs.
