Elevate traditional cacio e pepe pasta with cheesy, spicy breadcrumbs, savory pancetta, and flavorful broth for a quick and delicious Italian dish. Bellissimo!
Ingredients:
  • 3/4 lb uncooked spaghetti, broken in half
  • 1 carton (32 oz) Progresso™ chicken broth
  • 1 tablespoon butter
  • 3 oz diced pancetta (2/3 cup)
  • 1 clove garlic, finely chopped
  • 1/2 teaspoon red pepper flakes
  • 1 cup Progresso™ plain panko crispy bread crumbs
  • 1 cup shredded Parmesan cheese
  • 1/2 cup chopped fresh Italian (flat-leaf) parsley
Instructions:
  • In a large saucepan, bring spaghetti and broth to a rapid boil over high heat. Reduce to medium heat and cook for 10-12 minutes, stirring often, until pasta is cooked al dente and most of the liquid is absorbed. Take off the heat and let the pasta sit for 1 minute before serving.
  • In a 10-inch skillet over medium-low heat, melt butter until sizzling. Add pancetta and cook for 4 to 5 minutes until it turns crispy, while stirring often. Introduce garlic and pepper flakes, stirring for another minute. Toss in bread crumbs and cook for 1 to 2 minutes until they turn golden. Remove from heat and set aside.
  • Mix the cheese and parsley into the pasta. Serve the pasta on 4 plates and top each with the pancetta mixture.
